I believe in changing the oil often but once every 500 miles is overkill. One thing I'm not sure of: did you change the oil filter at the 600 mile checkup? I sure hope so - your engine probably spits out a lot of metal particles during the initial breakin and so it's important to change the filter.
The manual says that after that first change you only need to change it every 3600 miles or so, so once every 500 is a waste of time and money.
